To test baking soda: Mix 1/4 teaspoon vinegar into 1/2 cup hot water, then add 1/4 teaspoon baking soda. If it fizzes, youre good to go.
To test baking powder: Add 1/4 teaspoon baking powder to 1/2 cup hot water. If it bubbles, its fresh and ready for baking.

(111,691 posts)2. I don't know about the baking soda tip. I buy it in large bags (more for cleaning) and don't seal
the bag fully half the time, yet it always fizzes with the vinegar.. I know it isn't fresh...

I'm thinking if it still fizzes, it's still good.

for years at a time, and never had any fail the test.

But if you use it regularly a closed can will stay good until empty.
I'm now using individual packets of baking powder. It is single acting and I don't bother with the soda.
