Are your baking powder and baking soda fresh?

To test baking soda: Mix 1/4 teaspoon vinegar into 1/2 cup hot water, then add 1/4 teaspoon baking soda. If it fizzes, you’re good to go.

To test baking powder: Add 1/4 teaspoon baking powder to 1/2 cup hot water. If it bubbles, it’s fresh and ready for baking.

But if you use it regularly a closed can will stay good until empty.

I'm now using individual packets of baking powder. It is single acting and I don't bother with the soda.
