Homestyle Ground Beef Casserole
You've just found your new favorite ground beef casserole recipe.

Ingredients
1 lb. ground round
1 (14 1/2-oz.) can diced tomatoes with basil, garlic, and oregano, undrained
1 (10-oz.) can diced tomatoes and green chiles, undrained
1 (6-oz.) can tomato paste
1 tsp. salt
1/2 tsp. dried Italian seasoning
1/4 tsp. pepper
3 cups uncooked medium egg noodles
5 green onions, chopped
1 (8-oz.) container sour cream
3 oz. cream cheese, softened
4 oz. shredded sharp Cheddar cheese (about 1 cup)
4 oz. shredded Parmesan cheese (about 1 cup)
4 oz. shredded mozzarella cheese (about 1 cup)
Directions
Cook beef mixture:
Brown ground round in a large skillet over medium, stirring constantly, 5 to
8 minutes or until meat crumbles and is no longer pink; drain
Stir in both cans diced tomatoes and next 4 ingredients. Bring to a boil;
reduce heat, and simmer, uncovered, 5 minutes. Remove from heat; set
aside.diced tomatoes and seasoning added to ground beef in a hot pan
Cook egg noodles:
Preheat oven to 350°F. Prepare egg noodles according to package directions.
Stir together hot cooked noodles, chopped green onions, sour cream, and
cream cheese until blended.
Add casserole ingredients to pan:
Spoon egg noodle mixture into a lightly greased 13- x 9-inch baking dish.
Top with beef mixture; sprinkle with cheeses in order listed.
Bake casserole:
Bake, covered, at 350°F for 35 minutes. Uncover and bake 5 more minutes.
Let stand 10 to 15 minutes before serving.
Make-Ahead Tip
Label and freeze assembled, unbaked casserole up to 1 month. Thaw in
fridge overnight. Let stand 30 minutes; bake as directed.

Ham And Noodle Casserole
This comforting ham and noodle casserole is just right for guests or family dinners.

Ingredients
8 oz. uncooked egg noodles
1 (10 1/2-oz.) can cream of mushroom soup, undiluted
1 (8-oz.) container chive-and-onion-flavored cream cheese, softened
2/3 cup milk
2 cups chopped baked ham
1 1/2 cups fresh broccoli florets
1 (10-oz.) package frozen asparagus, thawed
6 baby carrots, chopped
1 (8-oz.) package shredded mozzarella cheese
1 (4-oz.) package shredded Cheddar cheese
1/2 cup crushed seasoned croutons
Directions
Cook pasta:
Cook pasta according to package directions; drain.
Combine ingredients, and add to baking dishes:
Stir together soup, cream cheese, and milk in a large bowl.
Stir in pasta, ham, and next 3 ingredients.
Spoon half of ham mixture into a lightly greased 13- x 9-inch baking dish.
Add cheeses to casseroles:
Combine cheeses. Sprinkle half of cheese mixture over casserole.
Spoon remaining ham mixture over cheeses.
Add cheese-crouton mixture:
Combine remaining cheese mixture with croutons. Sprinkle over casserole.
Bake casserole:
Bake casserole at 400°F for 30 minutes or until lightly browned.

Husband's Delight
This comforting casserole goes by many names.

Ingredients
1 (16-oz.) pkg. egg noodles
1 Tbsp. olive oil, plus more for greasing baking dish
1 (9-oz.) yellow onion, chopped (about 2 cups)
1 lb. ground sirloin
8 oz. sweet italian sausage, casings removed
1/2 tsp. kosher salt
1 (0.70-oz.) envelope Italian dressing mix
1 (32-oz.) jar marinara sauce (such as Raos)
1 (8-oz.) pkg. cream cheese, softened
1 cup whole-milk cottage cheese
1/2 tsp. crushed red pepper
1 (8-oz.) pkg. pre-shredded sharp Cheddar cheese (about 2 cups)
Directions
Prepare pan:
Preheat oven to 375°F. Grease a 13- x 9-inch baking dish with oil.
Cook egg noodles:
Cook noodles in a large pot of boiling salted water according to package
directions. Drain and set aside.
Sauté onions:
Heat oil a large nonstick skillet over medium-high. Add onion, and cook
until softened slightly, about 3 minutes.
Cook ground beef:
Add ground sirloin, sausage, salt, and Italian dressing mix. Cook, stirring
occasionally, until beef and sausage are browned and cooked through, 6
to 8 minutes.
Add noodles and sauce:
Spoon into prepared baking dish in an even layer.
Make cheese mixture:
Stir together cream cheese, cottage cheese, and crushed red pepper
in a large bowl.
Dollop evenly over pasta mixture in baking dish.
Spread into an even layer to cover noodles.
Add cheese:
Sprinkle evenly with Cheddar cheese.
Bake casserole:
Bake in preheated oven until hot and bubbly, 25 to 30 minutes.

I no longer cook. I'm in a senior living facility and don't have a full kitchen, just a fridge, microwave, and two burner stove top.
