I often leave eggs out to get to room temperature when using them for cooking or baking. And as others have pointed out, in many countries eggs are not routinely refrigerated.

ETA: I have several old cookbooks that talk about how to preserve uncooked eggs for several months in a solution of "water glass" (sodium silicate)

If they sink, they are good, if they float, throw them away. That’s the general rule of thumb. I think they are probably ok. We don’t refrigerate our eggs from our chickens for a few days, but once they are refrigerated they should stay refrigerated.

I looked for a long time in the fridge area before I asked and was shown them on the shelves. So no, they just last longer if refrigerated in the carton (a couple of months)

We wash them to scrub salmonella from the shells, which leaves them porous and subject to infection, but cuts the need for vaccinating chickens.

That means that we have to refrigerate our eggs, but most of the rest of the world doesn't. Here's the USDA info:

In 1987 I learned from a friend that eggs will stay fresh for weeks!!! You just need to rotate them a little in their container and they're ready to go.

She had sailed from San Francisco to Hawaii and she told me about this tip.

I also learned from a student from the Philippians that butter can stay out of the fridge for a few days without going bad.

If you don't use them up in the next couple of weeks, just test tem in a tumbler of water. A bad egg will float to the surface, large end first.

What makes eggs in the US unsafe when stored at room temperature is the insistence of producers on washing the protective coating off them because the jerks think housewives can't handle a few feathers or some chicken shit smeared on the outside.

Unwashed eggs can be safely stored at room temperature for weeks, which is what the rest of the world does.
