What's for Dinner, Mon., Oct. 13, 2025

I am experimenting with baking corn bread or corn muffins in my new air fryer today!


This is only a temporary location while I get used to it. Once I understand how to use it, I'm having my handyman Stan build a cabinet for me in my utility room, next to my kitchen.

Hopefully I will be back later with a pic of some delicious muffins!

If they turn out, I'm having vegetable soup with corn muffins. Cucumber salad with dill.

Kombucha: cherry-ginger.

Dessert: chocolate tapioca pudding, vanilla shortbread cookie.

Just returned from fav Mex restaurant. Mon is buy 1 margarita botato, get one half off day! My fav. Potatoes are enormous, almost the length of my forearn!

We still had half a large pizza from yesterday so my wife made a tossed salad to go along with the air fried slices. BTW we think using an air fryer to heat up left over pizza is the best method out there. So much better than microwaving it and super fast for a hot crisp slice in just a few minutes.

or pasta fazool. It's a cool, rainy day so something stew-like is called for. I use a recipe from "The Harvest Bean Book" that uses roasted red peppers instead of tomatoes, and I've broken open a bag of the Rancho Gordo beans. Leftover brownies for dessert

(How do you have leftover brownies? We made some for a going-away party for some friends leaving the area. Everybody else at the party also brought cakes, cookies, assorted pastries, or dried fruit, so there was a sugar overload and the brownies never got touched)
