What's for Dinner, Tues., Oct. 14, 2025

I put a corned beef in the slow cooker. Later I'll add Savoy cabbage, carrots, and red potatoes.

Kombucha: peach ginger.

Dessert: chocolate hazelnut tapioca.

Among them: Tuscan baked chix, roasted salmon w dijon honey sauce, and citrus & carrot salad.

Saving for bkfst: Bacon and mozzarella egg bites, green goddess for dipping! Enough for Thursday!

FINALLY delivered, and eating! Happily was able to share with my daughter.

I'm having roasted salmon w dijon honey sauce, salmon is roasted in a garlicky olive oil marinade until tender, allowing its natural richness to shine. Roasted carrots, parsnips, brussels sprouts, cauliflower, and red onion round out the plate, their deep, earthy flavors intensified in the oven. On the side, a Dijon-honey sauce brings just the right touch of tang and sweetness. and

citrus & carrot salad. castelvetrano olives, fresh herbs, and rose water. The carrots, red onions, fennel, olives, and radishes get seasoned to perfection and marinate for a few hours. Then the marinated mix is adorned with a garnish of lettuce, orange supremes, mint leaves, and cilantro. Mounded in the center of the plate and drizzled with rose water, this dish is finished with sliced almonds and citrus dressing for a refreshing burst of texture and acidity. (Daughter loves it, so sent 1/2 serving home with her, and will regularly order for her.

Ice cream for desert, later.

I'm headed to the store in a few minutes for this and the next couple of days worth of meals. Only change is cheese and tortilla chips with my chili, and LOTS of cilantro!! (gryn)

I think tomorrow is either gonna be tonight redux, or Beef Stroganoff. I'm picking up the stuff for both meals tonight. Also planning for a chicken and wild rice soup in a few days, along with fresh baked bread. The SS check just came in, so we eat well for the next few days, at least!

She made a delicious salad with fresh and roasted veggies, linguini al fredo with mushrooms, broccoli and chicken chicken.
Like having a chef!

Steam- fried in evoo and veggie broth: chopped onion, orange bell pepper, celery, cabbage, zucchini, minced garlic and ginger. When done I added sliced mushrooms, red pepper flakes, and crispy tofu. I made a slurry of veggie broth and Patak’s curry paste and added it to the vegetables and cooked for a few more minutes. Served over brown basmati rice. Cheers!🥂
