I can't master it, but I've isolated the problem to leaving it to cook too long which causes the cheese to break (separate into fat and solids). I have to learn the window and ratios where the noodles soak up the custard, but the cheese stays melty. But don't get me wrong - It may be effed up but the flavor is still bomb.

When I lived in the apartment, the electric oven was off by 50 degrees

So yeah. I definitely finally got a thermometer before one Thanksgiving which is actually when I definitely make M&C.

The oven is definitely crap, but I've done the best I can with what I got. Truth be told, I cook the turkey so slow that I'm always happy with those results at least.
